I was surprised to see this... I have started substituting buffalo for all my beef needs and even ground turkey! It cooks faster than beef, has more flavor, and is healthier all around. Also, you can cook it "rare" like beef, which is important to me and my hamburger addiction.

It has a more distinct flavor, definitely. I like that, because I can use less seasoning. My favorite thing to make is buffalo pitas with grilled veggies and hummus (make your own hummus, btw). mmmmmmmmmmmm

Buffalo meat is great. For anyone in SF, check out Bullshead Grill. Awesome buffalo burgers. That site doesn't mention another benefit, buffalo meat has more protein than beef.
